Rainbow Mochi 1 pound mochiko 2 cups sugar 1 teaspoon baking powder 1 can - 12 oz coconut milk 2 cups solar water (click to learn how to make it) 1 teaspoon vanilla food color Place first 3 ingredients in bowl. Gradually blend in coconut milk, water and vanilla. Remove 2 cups of mix. Add 3 drops of green food coloring. Pour into greased 9 x 13 pan. Cover with foil and bake for 15 minutes at 350˚ Pour 2 cups of white mix over first layer. Cover with foil and bake for 20 minutes. Add red coloring to remaining mix and pour over second layer. Cover and bake for 30 mintues. Cool uncovered overnight. Cut with plastic knife. |
