Fairy Cakes*

*Cupcakes are called Fairy Cakes in England and often are served for special celebrations.

1. Choose your favorite cake ingredients or cake mix.

2. Prepare Batter.

3. Fill tins 1/2 to 2/3 full.

4. Bake and allow cooling.

5. Decorate with your favorite icing and sprinkles, coconut or candies as inspired.

Strawberry Icing in a Blender 

1 # Confectionary Sugar

¼ Cup Melted Butter

¼ Cup Sliced Strawberries

You can also substitute the Strawberries using 1 medium peeled, cut up orange with zest from that orange.
